APPETIZER

An appetizer is a small dish of food or a drink taken before a meal or the main course of a meal to stimulate one's appetite.


Salad is a cold dish of various mixtures of raw or cooked vegetables, usually seasoned with oil, vinegar, or other dressing and sometimes accompanied by meat, fish, or other ingredients.


A green salad is a mixture containing a specified ingredient served with a dressing.



It is also a vegetable suitable for eating raw.


Today in class, we learn on how to make mix green salad with vinaigrette and waldorf salad. It's an easy recipe that you can make at home!

SERVICE GEAR

Today we're going to share on how to use a service gear while handling food to guest. Service gear is based on fork and spoon. Handling food using a service gear is the most important skill because it affects our way of serving clean food to guest. Service gear also acts as our 'hands' in the food and beverage industry. The service gear is usually used during Russian or French service (silver service).


HOW TO HOLD THE SERVICE GEAR

 
First, you need to embed your pinkie finger under the thread of the spoon followed by your ring finger placed above the thread of the spoon and your middle finger placed under the thread and lastly your pointer finger almost at the shoulder of the spoon.

 
Place the fork above the spoon and your thumb must be place on top of the fork's stem and your pointer finger in between to control the movement of the service gear.

 
Holding the service gear this way so it's easy to pick the food without ruining it.

 
Holding the service gear this way with the fork sided-up is easy to pick rounded type of food such as peas.
